Ingredients

1/2 Block extra firm organic tofu

1 Tbsp Southwest or taco seasoning

2 cups Cilantro lime rice. Brown rice for healthier option.

Shredded lettuce

Chopped red onion

Sweet corn

Cherry tomatoes

Black beans

Avacado

Salsa


Preparation

Press tofu block with paper towels or in a tofu press to remove excess moisture. Break into dime size pieces and add to a nonstick pan with a little olive oil and saute. After tofu begins to firm up, add southwest seasoning to taste and set aside.

Prepare 2 cups of rice and stir in 1/4 cup fresh cilantro and 1 Tbsp of lime juice.

From here on, there are no rules.

Add ingrediants to your favorite bowl. Seperate or mixed together whatever your heart desires. Top with some avacado or salsa or both and enjoy.
