Southwest Casserole

This Southwest Casserole is a simple, flavorful one-pan meal perfect for busy nights. Packed with hearty ingredients like beans, rice, and flavorful seasonings and makes enough to feed the whole family. A satisfying dinner option with minimal cleanup required!
Ingredients
1 1/2 cups dry rice
2 cans petite diced tomatoes undrained
1 15 oz can of black beans drained and rinsed
1/2 head green cabbage coarsely shredded
2 cups zucchini coarsely shredded
1 medium onion chopped
1 cup frozen corn
2 cups water
3 Tbsp fahita seasoning
Toppings
sliced avacado
cilantro,
sliced cherry tomatoes
chipoltle cashew sauce
Fahita seasoning
1/2 Tbsp chilli powder
1/2 Tbsp cumin
1/2 tsp paprika
1/2 tsp dried oregano
Chipotle Cashew Sauce
Boil 1/2 cp cashews with 2 cups of water for 15 min
Drain and add cashews to blender with
1/3 cup waster
1/2 tsp chipotle powder or adobo chilli pepper
1/2 tsp paprika
juice of 1 lime
Blend until smooth
Preparation
Mix all of the ingredients except for the toppings and pour into a 3 qt rectangular baking dish. Cover with foil and Bake at 350 degrees for 90 minutes.
