Mediterranean Pasta

This Mediterranean pasta features kalamata olives, cherry tomatoes, and artichoke hearts, all tossed in olive oil. With a light, clean flavor profile, it embodies the essence of Mediterranean cuisine, making for a refreshing and easy-to-prepare dish that's ideal for any occasion.


Ingredients

16 oz of youur favorite healthy pasta noodles

1/2 red onion chopped

1 cup sliced mushrooms

1 cup spinach leaves

4 garlic cloves minced

1 cup chopped and marinated artichokes

3/4 cup calamata olives sliced in half

1 cup cherry tomatoes sliced in half

 

Preparation

Prepare pasta as directed

Saute tomatoes, in olive oil, separate from the rest of ingredients until tender.

Saute remainder of ingredients in olive oil until cooked through.

Toss pasta with veggies. Top with some cracked pepper and or italian seasonings.
