Start your day right with this hearty, flavorful breakfast burrito, a perfect choice for mornings on the go. Inside a warm, soft tortilla, you'll find a savory tofu scramble seasoned with a hint of turmeric, garlic, and onion for a satisfying egg-like texture and taste. Nestled within are golden-brown diced roasted potatoes, crispy on the outside and fluffy within, adding the perfect touch of comfort and crunch.

Creamy slices of ripe avocado bring a smooth, buttery balance, while a sprinkle of fresh herbs or a dash of your favorite hot sauce can elevate the flavors even further. This protein-packed, plant-based burrito is not just delicious—it's a handheld bundle of energy to fuel your busy day.


Ingredients

Tofu scramble seasoning.

1/2 cup nutritional yeast

1 tsp black salt

3 tsp onion powder

1 tsp garlic powder

1 tsp tumeric

 

Tofu Scramble

1 Block organic firm tofu

1 1/2 cups chopped veggies

1 1/2 Tbsp of tofu scramble seasoning

3 Tbsp plant milk or water

Healthy, large tortilla of your choice

 

For Burrito

1 large tortilla

1 cup of tofu scramble

1/3 cup diced roasted potatoes

1/2 avocado sliced

 

Preparation

For Tofu scramble

Saute some of your favorite veggies and set aside.

Take a block of organic, firm tofu and pat with a paper towel to get rid of some of the extra moisture. Crumble into a pan and gently saute which will remove moisture and help create a little firmer texture.

Add 1.5 Tbsp of tofu scramble seasoning

Add 3 Tbsp of plant milk or water

Combine with veggies and stir well. Seasoning will mostly dissolve in the plant milk.

Add about 1 cup of scramble into a large tortilla along with some chopped roasted potato and avocado slices if you wish. Sear on flat top or fry pan, seam side down to seal and enjoy.
